Oui je vais garder des 3.
Mais j'ai l'impression que je suis trop sélectif dans mon triage, a la fin je vais avoir 100g max je pense.

Bonjour à tous, cela faisait un moment que je n'étais pas venu sur le forum,
Petit soucis de santé qui ont fait que j'ai du arrêté le thé, je peux à nouveau consommer du thé sans problème,
Pour ma reprise je souhaite acheter un gaiwan, car je pense que ma théière a une mauvaise influence sur mes. Puerh, je viens de faire une petite commande sur kancha, et j'aimerais infuser correctement les thés.
Quelqu'un d'entre vous aurez un gaiwan à me vendre ?
Sinon n'importe quel gaiwan en verre ou en porcelaine fera l'affaire ?
Même si j'en prend un pas cher ?

Oui, un gaiwan en porcelaine fera parfaitement l'affaire et on en trouve des pas chers du tout.

The Economist : Micro-organisms play a bigger part in tea-making than was realised
Black tea brewed from unsterilised leaves had, as per normal, lots of catechins and theanine, both of which made it flavourful. Tea made from sterilised leaves didn’t, and its taste suffered as a consequence. Black tea, then, seems to get its flavour in the same way that dark tea does [fermentation].

Je pense que l'article mentionné est "Black Tea Quality is Highly Affected during Processing by its Leaf Surface Microbiome", disponible en pdf et dont voici le résumé :
Microbiomes can greatly affect the quality of fermented food and beverages, including tea. In this study, microbial populations were characterized during black and green tea manufacturing, revealing that tea processing steps can drive both the bacterial and fungal community structure. Tea leaves were found to mostly harbor Proteobacteria, Bacteriodetes, Firmicutes, and Actinobacteria among bacteria and Ascomycetes among fungi. During processing, tea microbial populations changed especially between sterilized and unsterilized samples. The surface sterilization of fresh leaves before processing can remove many microbes, especially the bacteria of the genera Sphingomonas and Methylobacteria, indicating that these are mostly phylloplane microbes on tea leaves. The surface sterilization removed most fungi, except the Debaryomyces. We also observed a fluctuation in the content of several tea quality-related metabolites during processing. Caffeine and theanine were found in the same quantities in green tea with or without leaf surface sterilization. However, the sterilization process dramatically decreased the content of total catechins and theanine in black tea, indicating that microbes on the surface of tea leaf may be involved in maintaining the formation of these important metabolites during black tea processing.

Merci pour cet article intéressant. Quelqu'un peut il m'expliquer en quoi consiste cette stérilisation ? Est elle plutôt faite sur des thés de piètre qualité ou bien le contraire ?

La stérilisation ne fait pas partie du procédé normal. Elle sert à tester l'importance des micro-organismes (que détruit l'eau de javel).

Les grandes serres du parc de la Tête d’or à Lyon sont réouvertes. Dans la serre aux camélias, celui qu’on vénère ici a été déplacé. Il n’en reste qu’un pot alors qu’il était en terre avant.
